Celebrate the year of the Snake RELish style with a simple, balanced stir fry. (Translation: veggie focused, nothing oily, salty, or heavy)

1. Prepare simple sauce:
Mix together 3 parts soy sauce, 2 parts rice vinegar, 1 part sesame oil, minced garlic (1 to 2 cloves).

2. Vegetables
Over medium high heat in a wok or pan. Add some water or chicken stock as the veggies cook to keep them from sticking to the pan. (I prefer this over oil but you could use a sparing amount of oil too):

snow peas
cabbage, chopped
carrots, chopped
eggplant, diced
onions, thinly sliced
bell pepper, chopped
bean sprouts
water chestnuts, sliced

2. Once veggies are soft add your protein and sauce.
Chicken, shrimp, tofu or beef. Mix with veggies until cooked all the way through.
You could also crack an egg in the pan with all the vegetables and cook it like you would a scrambled egg.

3. Top with chopped green onions and/or sesame seeds. Optional: Serve over brown rice or soba noodles.
